Single Hill Brewing: Craft Beer Brewed Where the Hops Actually Grow

Most breweries buy their hops from Yakima. Single Hill just opens the window.
Based in the Yakima Valley — which produces roughly 75 percent of all hops grown in the United States — Single Hill Brewing occupies a position few breweries can claim: they don't source from the hop capital of the country, they exist inside it. That proximity isn't a marketing angle. It shapes how they brew.

Head Brewer and General Manager Zach Turner came up through Odell Brewing before spending time with Yakima Chief Hops, one of the largest hop marketing cooperatives in the world. When he and his co-founders launched Single Hill, they built relationships directly with the farms growing what goes into the beer. That means knowing which farms' Citra is performing this year, which lots carry the character they're after, and when to pull wet hops and get them into the kettle the same day they're harvested. That kind of sourcing knowledge doesn't come from a catalog.
The core lineup reflects it. Adams Pils is a Czech-style pilsner with the kind of hop clarity that comes from working close to the source — clean, dry, and precise. Sightglass is a hazy pale ale with restrained tropical character that earns its place on any account's shelf year-round. Eastside IPA is a West Coast IPA that shows what hop selection actually looks like in the glass: defined, layered, and built to last through the pour.
And then there's Energy Cone. Every fall, Single Hill brews a fresh hop IPA using wet hops harvested directly from named Yakima Valley farms — Newhouse Farms, Carpenter Ranches, Sauve & Son — picked and in the kettle within hours of harvest. The 2026 vintage is out now. It won't last.
